Carly's Blessing...

I am so proud of Mitch, he gave his sweet daughter such a great and meaningful blessing yesterday at church. He blessed Carly with such loving words and such strong conviction that I hope and pray will come to pass for her. Carly Jane we love you so much and you have also been blessed with such loving family and friends to help guide you along in this life.

To one Oreo addict to another...

You know who you are! This recipe caught my eye on picky palate today and if any one knows me they know how much I LOVE Oreo cookies! I never buy them because I will and can eat the whole box! So I figure its best for my figure to not buy them often. But after finding this recipe I just might have to give this a try. And because I know of someone else who loves Oreos as much as me...Mary. This you better try!

Chocolate Chip Oreo Cookies
1 stick softened butter
6 Tablespoons sugar
6 Tablespoons brown sugar
1 egg
½ teaspoon vanilla
1 ¼ Cup flour
½ teaspoon baking soda
½ teaspoon salt
8 broken pieces Oreo Cookies
1 Cup chocolate chips

1. Preheat oven to 350 degrees F. Cream butter, and sugars until well combined. Add egg and vanilla until mixed well.

2. Place flour, baking soda and salt into a large bowl, stir to combine. Slowly add dry ingredients to wet ingredients then stir in oreos and chocolate chips until just combined.

3. With a medium cookie scoop, scoop onto a parchment or silpat lined baking sheet. Bake for 7-9 minutes or until cooked, but still soft. Let cool on baking sheet for 3 minutes before transferring to cooling rack.

Spring Break is finally here!!

Last night Mitch and the girls camped out in the den. Aubs has been wanting to do that for awhile and so she was so thrilled when Mitch agreed to do it. They had fun staying up late, watching Hannah Montana and then this morning at 6:30 I could here the girls playing and laughing with their daddy:) Good times!

Baby wrap

Simply loving this baby wrap! A friend recommended this one to me and I am so glad I got it. Carly loves being in it and I am able to get some things done. The brand is called Lovey duds and you cna find them one Etsy.com. Mitch even put the wrap on the other night and said "So this is what it feels like to be pregnant." Um...actually no not really. Its way more uncomfortable!

Aubrie's Award and Straight A's...

At the elementary school's here in Farmington, they have a program called Character Counts. Each semester a child is recognized for a characteristic that they think is exceptional in each classroom. This semester the character counts awards were trustworthyness and good citizenship. Aubrie was chosen in her classroom as the student that shows good citizenship! Yay Aubs! Her teacher has nothing but such positive things to say about our girl. She is such a good student and always has a good attitude towards learning and with her peers. Her teacher also said that Aubrie has respect to others and will always lend a hand when she sees the need. Awesome Aubrie!
Caleb got his report card yesterday and you guessed it...Straight A's again! He has one more 9 weeks left and he striving to get all A's all year for the third year in a row. I met with Caleb's teachers last week in the gifted program and the middle school gifted teacher from Hermosa. Caleb scored so high in math that he scored out of the gifted math class in 6th grade so they asked if they could put him in an Algebra class with 7th and 8th graders. He also scores high in reading and reads at an 8.5 grade level! He will have three gifted classes in middle school next year and he is looking forward to going...Mitch and I are not! We are so blessed to have such smart kids. I have to brag about them because thet deserve it. They both work hard to learn and get good grades. They never complain about going to school and both usually look forward to going each day. I am so proud of both of them! Way to go kids!

Her first church day...

Yesterday we took Carly to church for the first time. I had to snap a few shots of her in her dress and bow:) Everyone was happy to catch a peek at her and of course she got lots of comments on how pretty she is. Unfortunately these pics just dont do her justice on how cute she is!
And I have a question Why is it when it is dead quiet and someone is saying a prayer your baby lets the loudest fart ever at that moment? Because thats what happened to me yesterday. I dont know why I get so embarassed, it wasnt me who did it. But maybe its because Carly doesnt know she needs to be embarassed so I am for the both if us:)
Like my grandma says "If you cant toot your own horn, who will?" LOL.

Something for the sweet tooth

Two of my favorite tastes put together...pistachio and raspberry:)) And still low calorie for a dessert.

1-1/2 cups crushed vanilla wafers (about 45 wafers)
1/4 cup finely chopped pistachios
1/4 cup reduced-fat butter, melted
1-1/4 cups fat-free milk
1 package (1 ounce) sugar-free instant pistachio pudding mix
6 ounces reduced-fat cream cheese
1 carton (8 ounces) frozen fat-free whipped topping, thawed, divided
1 package (12 ounces) frozen unsweetened raspberries, thawed
2 tablespoons sugar
2 tablespoons orange liqueur or orange juice
2 tablespoons chopped pistachios

In a small bowl, combine the wafers, finely chopped pistachios and butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack.
Meanwhile, in a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth. Beat in the pudding.
Set aside 3/4 cup whipped topping for garnish; fold remaining whipped topping into cream cheese mixture. Pour filling over crust. Freeze for 5 hours or overnight. Cover and refrigerate remaining whipped topping.
For sauce, place the raspberries, sugar and liqueur in a food processor. Cover and process for 1-2 minutes or until smooth. Strain and discard seeds and pulp. Refrigerate until serving.
Remove dessert from the freezer 15 minutes before serving. Remove sides of pan. Garnish with chopped pistachios and remaining whipped topping. Serve with sauce.
12 servings.
Nutrition Facts: 1 slice with 4 teaspoons sauce equals 214 calories, 9 g fat (4 g saturated fat), 18 mg cholesterol, 268 mg sodium, 28 g carbohydrate, 2 g fiber, 4 g protein
